Introduction:
Dinner meal seems to be quick deal in these rush times. What could be more enjoyable than sipping bowls of spicy, tangy and sweet peanut gravy with some garmagaram varai bhat. Varai bhat ni peanut amati are among the easiest thing to cook and makes a complete meal in less than half an hour. Enjoy this Navratri with this qucik fix recipe :D

Ingredients:
Varaicha Bhat
- 1 tsp Ghee
- 1/2 tsp Cumin Seeds
- 1 Bay Leaf
- 2 Cloves
- 1 Cinnamon stick
- 1/2 cup Varai / Samo seeds / Vrat ke Chwal / Moraiyo
- 1 1/2 cup Hot boiling water
Shengdanyachi Amti
- 1 tsp Ghee
- 1/2 tsp Cumin seeds
- 2 Cloves
- 1 Cinnamon Stick
- 2 tbsp Tamarind Pulp
- 1 tbsp Jaggery / Gudh / Gul
- 1/2 cup Roasted Peanuts
- 1 1/2 cup water
- 4 Green Chillies
- 1/4 cup boiled Potato cut in small chunks
Method
Varai Bhat (Bhagar)
- Rinse varai 2 to 3 times well in cold water and drain off.
- Heat 1 tsp ghee, add cumin seeds, 1 bay leaf, 2 Cloves, mix.
- Add Varai (Samo seeds) and roast over medium heat for 5 mts.
- Add hot boiling water, salt to taste.
- Bring it to boil over high heat, lower down the heat, cover and cook for 5 mts.
- After 5 mts, lower the heat for thelowest possible temperature and simmer for 15 mts.
- Varaicha bhat is ready to be served!
Shengdanyachi Amati
- Dry roast whole peanuts untile it changes its color. Remove its peels.
- Mix roasted peanuts, green chillies and water in mixie pot and blened to make it in to smooth paste.
- Heat up 1 tsp ghee, add cumin seeds, 1 Cinnamon stick, 2 cloves, mix.
- Add peanut paste, mix well.
- Add tamarind pulp, jaggery, salt to taste.
- Simmer it over medium heat for 5 to 7 mts.
- Spicy Peanut gravy is ready to be served!
Tips:
- Sometime varai has small stones or impurities in it, make sure you clean varai very well before you cook it.
- Instead of roasting peanuts at home, use store bought unsalted raosted peanuts.
