Introduction:
This is a classic dish prepared by using roasted eggplant or baingan. Goes perfect with any type of bhakari!

Ingredients:
- 1 large Eggplant
- 1 Onion finely chopped
- 2 tbsp Oil
- 1 tsp Cumin seeds
- 1 tbsp Garlic finely chopped
- 1 tsp Garam Masala
- 1 tsp Red Chilli powder
- 2 Green Chillies finely chopped
- 4 tbsp roasted peanut powder
- 1/2 cup Coriander Leaves
- 1 tbsp Jaggery / Gudh, Gul
Method
- Rub eggplant very well with oil. Then put that in to oven tray and bake 450 degree fahrenheit. And bake 15 to 20 minutes from each side.
- After the baingan is cooked, peel its skin off completely.
- Then mash it very well.
- Heat up 2 tbsp oil, add cumin seeds, onion and saute until onions turn translucent.
- Then add chopped garlic and green chillies and cook for a minute.
- Add garam masala, red chilli powder, mix and cook for 2 more minutes.
- Add mashed eggplant, salt and jaggery, mix very well.
- Add roasted peanut powder, mix, cover and cook for 5 to 6 minutes.
- Garnish with finely chopped coriander leaves!
